For too long, the rules of wine pairing were written for a different table. They were written for cream-based sauces with minimal heat and linear flavor profiles.

Indian gastronomy is different. It is a complex orchestra of spices—turmeric, cumin, cardamom, and the fierce heat of the chili. It demands a different set of rules.

The Indian Wine Society is a culinary archive dedicated to this intersection. We document the chemistry between the Deccan volcanic terroir and the heritage of the Indian kitchen.
